How to choose a ripe avocado
In fact, most avocado trouble starts with buying a whole bag at the same stage. Buy a mix of firm and nearly ripe ones, so you will not be racing them all at once.

A slight give. Cradle it in your palm and squeeze gently. A ripe avocado yields a little, while a rock-hard one needs a few days on the counter.
Heavy for its size. In other words, a ripe avocado should feel slightly firm and heavy.
No dark blemishes on the skin. Also skip very soft fruit and skin that looks faded and dull.
Buying for later? Pick firm avocados and ripen them at home, so they are ready when you need them.
Check under the stem. When the little stem cap comes off easily and it is green underneath, the avocado is ready, according to a dietitian at Cleveland Clinic.

Avocados only ripen after they are picked, and cold stops the process. To store avocados so they last, ripen them on the counter first, then use the fridge to hold them once they are ready.
How to store avocados in the fridge
Put ripe, whole avocados in the fridge, loose. They keep for 2 to 5 days, and avocados that are only just ripe can last up to a week. Do not refrigerate avocados that are still firm, or they will not ripen properly.

How to ripen avocados before you store them in the fridge
Leave firm avocados at room temperature until they soften. Nearly ripe ones soften within about 3 days. To speed things up, close them in a paper bag with an apple or a banana. After that, they stay at their best for 2 to 3 days on the counter.
How to store cut avocados
Leave the pit in the half you are saving, squeeze lemon or lime juice over the cut face, and wrap it tightly with no air trapped, or seal it in an airtight container. Keep it in the fridge and plan to eat it soon: a dietitian at Cleveland Clinic gives a cut avocado a day or so. If a thin brown layer forms, scrape it off before eating. Can you store avocados in water?
No, however often the trick turns up on social media. The FDA advises against it. It has found Listeria on nearly 18 percent of avocado skins tested and Salmonella on 0.74 percent, and in its research, keeping avocados in water let Listeria get into the flesh, as Cleveland Clinic reports. Use citrus juice and a tight wrap instead.
How to store avocados for a long time
Instead, freeze them as purée. Whole or sliced avocados do not freeze well, but mashed avocado with a little lemon juice does. The next section shows how.
Can you freeze avocados?
Yes, as purée. In fact, freezing is the best way to store avocados you cannot eat in time. On its avocado freezing page, Colorado State University Extension says most frozen fruit keeps its best quality for 8 to 12 months at 0°F or below.
How to store avocados in the freezer as purée
Wash, peel and pit ripe avocados, then mash them. Stir in 1 tablespoon of lemon juice for every 2 avocados so that the purée browns more slowly. After that, pack the purée into containers, leaving headspace, or press the air out of freezer bags. Finally, seal, label with the date and freeze.
How to store frozen avocados in small portions
Spoon the purée into an ice cube tray, freeze it, then move the cubes into a freezer bag. One cube is about right for a taco, and cubes can go straight into a smoothie without thawing.
What happens to avocados you store in the freezer
Freezing is not kind to whole or sliced avocado, so plan to use the purée in guacamole, spreads, dressings and smoothies rather than for slices.

How to tell if an avocado has gone bad
However you store avocados, most brown flesh is oxidation, not spoilage. A brown surface is usually fine. A rancid or sour smell, watery flesh or mold, however, is not. Here is how to tell which one you have.
Verdict: use it
Ripe
Light green, buttery flesh that gives slightly when pressed, with a clean, mild smell and no dark patches.
Verdict: scrape it and use it
Avocado turned brown on the surface
Cut flesh turns brown where air reaches it. When only the top layer is brown and the flesh underneath is green, scrape the brown layer off and use the rest.
Verdict: use it, expect less flavor
Dark gray avocado flesh from the cold
Avocados kept too cold can turn dark gray or brown inside and taste flat, with a soft texture. An extension specialist quoted by UC Riverside says this is not a safety problem unless the fruit has also sat at room temperature.
Verdict: throw it out
Rancid, sour or watery
A rancid, sour or otherwise off smell, or flesh that has gone watery instead of buttery, means the avocado has spoiled. In this case, do not try to cut around it.

Mold on avocado
Mold shows as white, gray, green or black fuzz on the skin, stem end or flesh. A ripe avocado is soft, and UConn Extension advises throwing out soft produce with mold rather than cutting it away. Strawberries also get the same verdict for the same reason.
Should you wash an avocado before cutting it?
Yes. In FDA sampling from 2014 to 2016, Listeria was found on 17.73% of avocado skins and on 0.24% of flesh samples. Scrub the skin under running water with a clean produce brush and dry it before cutting, so the knife does not carry bacteria into the fruit.

Mistakes people make when they store avocados
These are the ways people store avocados that cost them the most, and each one has an easy fix.
Refrigerating firm avocados. Cold stops ripening, so let them soften on the counter first.
Leaving ripe avocados out. Once ripe, they stay at their best for only 2 to 3 days at room temperature, so move them to the fridge.
Cutting before washing. The knife can drag bacteria from the skin into the flesh. Scrub and dry the skin before you cut.
Storing a cut half uncovered. Air browns the cut face, so add citrus juice, keep the pit in and wrap it with no air trapped.
Freezing slices. Whole and sliced avocados freeze poorly. Freeze purée instead.
Throwing out brown avocado. Since a brown top layer is usually oxidation, check the smell and the flesh underneath first.
Keeping a cut avocado in water. The FDA advises against it, because bacteria from the skin can get into the flesh. Use citrus juice and a tight wrap instead.
